one: chioggia beet. walnut. bacon. green apple. endive.

two: homemade tagliarini. cauliflower. truffle butter. parmigiano reggiano.

three: duck confit. braised red cabbage. mustard sauce.

four: chocolate caramel mousse. cocoa nib. sea salt. shortbread.
